Soft drinks

Soft drinks - drinks, alcohol and used as a refreshing, dessert drinks or for therapeutic purposes.
Soft drinks are subdivided into: 1) fruit (fruit carbonated water, natural juices and fruit, vegetable, berries; syrups, extracts); 2) mineral water (natural and artificial). Fruit soft drinks, prepared drinking water, fruit and berry and vegetable juices, extracts, sugar, food organic acids (citric, and others), food dyes and flavorings. Carbonated soft drinks produced by the saturation of drinks carbon dioxide with the help of special devices - fountain offering.
Syrups are a natural fruit and berry juices, canned sugar; the content of the last not less than 60%. Extracts referred to as fruit juices, concentrated by evaporation in vacuum pans. To make extracts use only clarified juice.
Drinking water isused in the manufacture of soft drinks, in addition to cleaning water treatment facilities, passed through special filters at the plant.
Fruit water should be transparent, no sediment and suspended particles. Soft drinks are stored at the temperature not more than 20 degrees in the hermetically sealed container, must be usable for at least 7 days. Carbonated soft drinks are kept up to 1 month in bottles in a horizontal position. Storage of soft drinks in direct sunlight causes damage (change of smell, precipitate, and so on).
In the prevention of foodborne infections and intoxications borne soft drinks, along with activities related to the quality and purity of the raw material to prepare beverages, is set to sanitary mode of production, and also constant and strict control over the personnel of the enterprises with bacteriological examination of possible hosting. Carbonated fruit soft drinks are natural (made on fruit and berry juices) and artificial (synthetic essences). Water, sugar, juices, extracts, fruit drinks, organic acids, food essences used in the manufacture of soft drinks, must comply with the requirements of the standards. When using sulfatirovannah juice content of sulfur dioxide should not exceed 20 mg/L. the Content of preservatives, salts of heavy metals and arsenic is not allowed. The use of saccharin instead of sugar is only permitted if the content of saccharin in the drink less than 0.015%; on the preparation of the drink on the saccharine should be indicated on the label.
Fruit and berry juices - natural juices of fresh fruit, berries, fruits, without adding water, sugar, food acids, dyes and flavorings. Canned juices pasteurization, filtration through a sterilizing filters and freezing. Acidity for different juices installed in 0,2-1,5% (malic acid). The salt content of copper should not exceed 5 mg/l, and salt tin to 100 mg/L. the Impurity of salts of lead and arsenic are not allowed. Juices have a positive effect on alkaline balance in the body. Some juices (tomato, apricot and others) can serve as a source of carotene and vitamin C.
When canned juices sugar (added in quantity not less than 60%) are stable in storage syrups used in the preparation of carbonated soft drinks and confectionery industry.
