Oleic acid

Oleic acid (formula With17N33COOH) - unsaturated fatty acid, colorless oily liquid without smell and taste, insoluble in water, soluble in organic solvents. Is part of almost all natural fats and oils (often in the form of triglycerides). Oleic acid is readily absorbed from food and participates in the processes of metabolism; salt oleic acid used to make soap. Cm. also Fatty acids.

Colorless oily liquid without smell and taste, hardens at 16 degrees, beats. weight 0,895 at 20oC, practically insoluble in water, but readily soluble in organic solvents. O. K. is a typical representative of unsaturated fatty acids; it forms salts, ethers, anhydrides and other derivatives, and also has the ability to react join and split by the oxidation reaction at the place of double bonds.
Oleic acid is an essential component of all natural fats and oils. In animal fats accounted for 36-45% of the total fatty acids in the body fat (fat sheep, bulls and other). Rich O. K. olive oil (80%), cotton (35%), sunflower (39%); linen, hemp, castor oil contain less than 10% of O. K.
Entering the body with meal, oleic acid is readily absorbed and participates in the processes of metabolism. O. K. can be synthesized in the body from preobrazovanij fatty acids, for example, of stearin. Cm. also Fatty acids.
