Polyphenols

Polyphenols - polyatomic phenols and their derivatives; widely distributed in the plant world as in the free state (pirokatekhin), and in the form of essential oils, glucosides and tannins (phloroglucin, pyragollole and others).
The polyphenols found in many food products; the oxidation of them are formed substances (for example, quinones), which makes them taste and flavor.
